Local raw honey from the girls doing the work.
Our hives sit south of Clarksville, TN, with plenty of woods, fields, and seasonal bloom around them. The spring honey has been sweet up front, deeper than you expect, and lightly floral after it settles on your tongue.

Spring honey notes
Sweet first, floral after.
The first spoonful is all sweetness, then the little floral note shows up behind it.

Current jars
Two sizes from the same hard work.
A pound of honey takes an almost ridiculous amount of flower visits. We think the girls deserve to have that work enjoyed properly, preferably on something warm.
Our apiary
South of Clarksville, where the bees have room.
The land around the hives gives the bees a mix of trees, pasture edges, wild growth, and seasonal bloom. That is why honey can shift from one harvest to the next. We like that. It means the jar still knows where it came from.
Small runs
We bottle what the season gives us and stop when the batch is gone.
Handled lightly
Warm enough to work with, not worked over until it loses itself.
Strained, not stripped
Big bits of wax, comb, and frame debris stay out of the jar.
Nothing added
No syrup, no stretching, no muddying a real harvest.
We try to be fair to the bees.
We are still a young farm, but this part matters to us: the bees are not little machines. They are livestock, pollinators, and the reason any of this exists. We keep them with the health of the colony and the land in mind.
We are also working toward using less plastic wherever we can. It is not perfect yet, but the standard is clear enough for us: care for the bees, respect the environment, and do not fake what goes in the jar.
